Rational Technologies allow retailers to cook without expensive ventilation system |

 Cooking ‘front-of-house’ is increasingly popular in retail outlets. Delis, supermarkets, C-stores and garage forecourts are fresh-cooking all sorts of products, from roasting chicken to baking bread. The problem is cooking fumes and condensation. Getting rid of them usually means installing expensive ventilation.
But now Rational offers two technologies – AeroCat and UltraVent – that make it extremely easy for retailers to install its SelfCooking Center, reveals the company in a press release. The two technologies combine to get rid of all cooking odours, fumes and condensation, without the need for extra ventilation.
The SelfCooking Center can cook virtually anything – all types of meat, chicken, fish, pies and quiches. It can bake bread, rolls and cakes. It can be the heart of the shop's food preparation - roasting, poaching, toasting, baking, baking-off, drying or regenerating. And it gives perfect results, automatically. All staff have to do is press the button to tell it what food is being cooked.
AeroCat and UltraVent have distinct but connected roles. AeroCat controls cooking fumes, and UltraVent handles steam and vapour. Together they allow a SelfCooking Center to be sited virtually anywhere it is needed – even in ‘island’ sites within retail stores – since they eliminate the need for costly ventilation ducts or dedicated fume and vapour extraction systems.
AeroCat is a patented catalytic system, installed within the SelfCooking Centre cabinet, that absorbs all the odours and smoke during cooking, cleaning the internal airflow. Which means that no fumes can escape from the cabinet.
The UltraVent ventilation hood fits on top of the SelfCooking Center. It uses a patented condensation technology to draw off steam and vapour as the food is cooking and when the door is opened. The vapours and steam are collected, condensed and easily drained away. |
